I grew up in Chicago, where Vienna Beef is an island of perfection. An institution as iconic to the city as deep-dish pizza and our skyscrapers.
For years, they built an empire on the perfect hot dog. Then, they entered an age of automation. They built a hyper-efficient, state-of-the-art factory to optimize growth.
The product lost its soul. The secret ingredient was gone.
Turns out, the secret ingredient had a name: Irving.
In the old plant, Irving's job was to cart the raw sausages between buildings. Along the way, he would stop, catch up with coworkers, and build relationships. That daily detour through warm rooms unintentionally provided a slow, gentle heat that gave the hot dogs their perfect snap.
When automation came, they didn't just remove an inefficiency. They removed the Irving magic.
